Emmer wheat (Triticum dicoccum), milled to make Emmer flour, was domesticated from a wild grass and Einkorn in the Ancient Near East over 9,000 years ago. Einkorn, together with naked barley, arrived in Britain around 2,000BCE, where together they were believed to have been the principal bread “corn” of Bronze Age farmers. Emmer was not a very high-yielding wheat so over time other grain varieties, such as Spelt (Triticum spelta) came to dominate through changes in cultivation methods. What is exciting today is that millers like Glichesters Organics together with modern artisan bakers are starting to get inspired by Emmer and make use of the intense bold flavour it gives breads, returning this bronze-age staple back into contemporary baking.
This "Zeas" bread is made out of 100% Organic Whole Wheat Emmer Flour to give the healthiest result possible.

Το δίκοκκο σιτάρι (Triticum dicoccum) ή ζέα δηλαδή παρέμενε για χιλιάδες χρόνια και το κυριότερο δημητριακό για τις χώρες της Μέσης Ανατολής και της Βόρειας Αφρικής όπου ονομαζόταν aja ή Emmer και χρησιμοποιούνταν και ως ζωοτροφή.
Ο πρώην πρόεδρος του ΕΦΕΤ Νίκος Κατσαρός γράφει πως αναφορά στην καλλιέργεια αυτού του δημητριακού στην Λακωνία κάνει ο Όμηρος «...ζειαί τ' ηδ' ευρυφανές κρι λευκόν» αλλά και στην Παλαιά Διαθήκη γίνεται αναφορά 32 «ο σίτος όμως και η ζέα δεν εκτυπήθησαν διότι ήταν όψιμα» [έξοδος 9: 32,32]. Ο Ηρόδοτος (5ος αιώνας π.χ.) ο γιατρός Γαληνός (2ος αιώνας π.χ.), ο Θεόφραστος (4ος αιώνας π.χ.) αλλά και ο Διοσκουρίδης (1ος αιώνας μ.χ.) αναφέρονταν στην κατανάλωση της ζέας από Έλληνες, Αιγύπτιους, Ρωμαίους και την χρήση της ως ζωοτροφή. Ακόμη αναφέρεται και ότι ο Μ. Αλέξανδρος έδινε στους στρατιώτες του ψωμί από αλεύρι ζέας.
